Sweet potatoes are a healthier choice in place of white potatoes. Baking, rather than frying, cuts calories and fat while maintaining great taste and fiber.
Preheat oven to 475 degrees F.
Wash and peel 4 sweet potatoes. Slice lengthwise into strips about 1/2″ thick. Place on non-stick baking sheet or on aluminum foil. Lightly spray with olive oil. (pour oil into a clean bottle with spray/squirt attachment for this). Sprinkle with cinnamon and/or cayenne pepper, if desired. Bake 15 mins., turn wedges over and bake additional 15 mins or until crisp outside, tender inside.
