Berry Tofu Mousse/Pudding

The berries provide  a beautiful pink color along with wonderful flavor!  A healthful breakfast or dessert idea.   Gluten free and dairy free.


1 package silken tofu
1 cup frozen berries ( strawberries or raspberries)thaw slightly
3 T agave nectar or honey
1/2 banana
1 T vanilla extract
1 tsp cinnamon

Blend all ingredients in a blender or food processor until smooth. Stir in more berries, if desired. Chill 1-2 hours and serve.  Top with a few whole berries, slivered almonds or pistachios, drizzle with a little Raspberry Sauce (see recipe), if desired.

You may substitute this recipe for the Tofu Yogurt in the Fruit and Granola Parfait recipe.
