2 cups Almond milk, Soy or DariFree milk
1/2 package of silken tofu
1 frozen banana, broken into thirds
2 T ground flaxseed
1/2 c frozen strawberries
1/4 c each blueberries and raspberries
2 tsp vanilla
Blend until thick and smooth. Makes 2 servings. Serve as a beverage or with a bowl of granola.
If you cannot use soy (tofu), simply omit it. Adjust the amount of non-dairy milk to obtain the consistency you desire.
Variations: PeachesN Cream use 1 c. fresh, frozen peaches in place of berries , 2 T agave and 1 T cinnamon.
Pina Colada Add 1/2 c. cocoanut milk with 1,1/2 cups almond milk and 1 c. frozen pineapple chunks in place of berries.
Orange Cream 2 cans (11 oz ea) mandarin oranges or 1,1/2 c. pitted tangerine or orange sections, 1 cup crushed ice, 1 c. silken tofu, 2 cups non-dairy milk, 2 T agave, 1 tsp vanilla.
Diabetics should reduce or omit bananas and pinepple.
