Chickpea Curry

3 cloves garlic, finely chopped
1½”/4 cm fresh ginger root, peeled and finely chopped
2 tsp ground cumin
2 tsp ground coriander
½ tsp. ground tumeric
¼ tsp. cayenne
2 tbsp olive oil
one 14.5 oz can diced tomatoes
1 large onion, peeled and finely chopped
8 oz/ white mushrooms, sliced (opt)
One 15 oz can chickpeas, drained
2 oz creamed coconut or 1 c. coconut milk or other dairy free milk
¼ c. chopped fresh cilantro/coriander plus extra un-chopped for garnish
Juice of ½ lemon
3 oz toasted, flaked almonds (optional)
