4 frozen bananas, broken into thirds. Thaw slightly
¼ c. non-dairy milk (soy, rice or almond or other) Pour into a covered container and freeze.
¼ c. chopped walnuts
2 T chopped walnuts
1/8 c. chopped dates
2 tsp cinnamon
1 tsp ginger
1 tsp vanilla
Blend bananas, 2 T walnuts, soy milk, cinnamon, ginger, vanilla until fairly smooth. Add dates and blend briefly. You will still see bits of the dates. Stir in ¼ c. chopped walnuts. Serve immediately.
Maple Walnut Ice Cream
follow above recipe , omit dates and add 2-3 T. maple syrup, blend.
Note for diabetes -Bananas tend to spike blood glucose levels.
