This delicious, healthful dressing is low fat and take only a few minutes to make.
Blend until smooth:
½ c soft tofu
1,1/2 tsp chopped dill or ½ tsp dried dill weed or seed
1 T lemon juice
1 tsp lemon pepper
Stir in an extra ¼ c finely chopped cucumbers
Garnish with fresh dill or mint leaves (opt)
