Fruit and Granola Parfait

This tofu yogurt dish makes a healthful, delicious breakfast or dessert.  My teenage son enjoys these parfaits.


Tofu Yogurt Recipe
1 package silken tofu
3 T agave nectar or honey
1 T vanilla extract
1 tsp lemon juice
1 tsp cinnamon
Blend above ingredients until smooth.
2 cups fruit (1 or a mix, such as blueberries, raspberries, strawberries, kiwi, peaches, bananas)
1 cup granola (see recipe)
Layer tofu yogurt, fruit and granola in 2 tall serving glasses. Top with slivered almonds or toasted pecans, if desired. Serve chilled.

You may substitute Berry Tofu Pudding for the Tofu Yogurt in this recipe, if desired.
