Gluten Free and easy Waffles


Dry Ingredients
1 cup white rice flour
1/2 cup cornstarch
1/4 cup sweet rice flour
1 tbsp baking powder
1 tbsp ground flaxseed
2 teaspoons cinnamon (opt)
1/2 teaspoon salt
1/2 teaspoon xanthan gum

Wet Ingredients
1 1/4 cups coconut milk or other dairy free milk
2 large eggs or egg whites, beaten, or egg replacer
1/4 cup ev olive oil
1 tbsp honey or agave nectar
1 teaspoon vanilla extract
non-stick cooking spray

In medium mixing bowl, whisk together white rice flour, cornstarch, sweet rice flour, baking powder, salt, and xanthan gum. In small bowl, whisk together milk, honey, eggs, oil, and vanilla extract until smooth.

Pour wet ingredients over dry ingredients. Using a handheld mixer or whisk, blend until batter is smooth. No lumps should remain. Heat waffle iron. Spray iron with non-stick cooking spray. Spoon batter onto hot iron (amount of batter will vary depending on your iron) and bake until golden brown and crisp. The waffle iron will release less steam when waffles are done. Serve hot with maple syrup or fruit syrup and fresh fruit. Serves 4.
