Kale Chips

A crispy, delicious, healthy snack idea.
Kale is high in vitamins A, K, and C as well as a good source of fiber, protein, calcium and iron. Adding lime juice to this recipe helps your body absorb the iron from the kale.

1 bunch of Kale
2 T. olive oil
2 T lime juice (opt)
½ tsp sea salt
¼ c. nutritional yeast (opt)
¼ c. garlic powder (opt)
¼ tsp black pepper or cayenne (opt)

Wash kale and pat dry. Remove the stem and cut the kale into 2″ pieces. Coat kale with oil and lime juice by either of the following methods. Place kale pieces in a plastic zip lock bag with the olive oil and shake, OR, lay kale pieces on a baking sheet, combine oil and lime juice in a spray bottle, and spray kale, turning to coat both sides. Sprinkle with salt and other seasonings, if desired. Place in pre-heated, 250 degree oven for 20-30 mins. Watch carefully to prevent burning and bitter taste.
