1 lb. firm tofu, drained and pressed
1/4 cup Red Star nutritional yeast flakes
1/4 cup finely chopped white onion or green onion
1/4 tsp tumeric and cumin
1/4 tsp garlic powder
1/4-1/2 tsp paprika
1/4 tsp black pepper
1 T Bragg’s liquid aminos
2 T sesame oil or olive oil
opt: 1/2 chopped bell pepper,
1/3 c. chopped white or portobello mushrooms
Heat oil in a nonstick skillet. Add onion and other veges and cook over medium heat, stirring often, for 3 minutes. Crumble tofu with your hands or a fork into a bowl. Add tofu and other ingredients to skillet, cook for another 3-5 mins. stirring gently.
Wrap in a warm flour tortilla with sliced tomato, avocado, cilantro if desired.
Add black beans, chopped olives and salsa for Mexican style meal.
Or serve on a plate with a slice of multi-grain toast and fresh fruit on the side.
