Soy Yogurt

Soy yogurt w fruitMake a batch of fresh, healthful soy yogurt to enjoy for breakfast or snack.  Use the plain version as a topping or in place of sour cream.  Gluten free and dairy free.

1 package silken tofu
3 T agave nectar or honey
1 T vanilla extract
1 tsp lemon juice
1 tsp cinnamon
Blend above ingredients until smooth.  Stir in chopped peaches, strawberries or cherries,  whole blueberries, raspberries or blackberries.

For a plain soy yogurt, omit cinnamon, use 1/2 tsp sweetner. Use as you would plain yogurt- with falafel, on sandwiches, with curry dishes, in place of sour cream in Mexican style dishes.  Add a bit of mint or minced garlic and use as a topping or dip.
