1 can chickpeas, drained, rinsed and pat dry
1 – 2 Tbs olive oil
1/2 teaspoon coarse kosher salt
1/4 teaspoon ground cumin
1/8 teaspoon chili powder
1 Tbs lime juice
Heat oven to 400 degrees. Place chickpeas in a bowl, add all other ingredients and mix to coat chickpeas. Coat a 9 x 13″ baking sheet with non-stick spray. Spread the chickpeas onto the baking sheet. Bake for 20 – 25 mins., turning every 5-10 mins to allow even baking and prevent burning. Bake until golden and slightly crispy on the outside. Cool slightly before serving.
Experient with various herbs and spices. Try adding some smoked paprika for a barbeque flavor. Substitute garlic powder for cumin.
