2 large sweet potatoes, peeled and cubed
3 tablespoons olive oil
2T. honey or maple syrup
1 tsp cinnamon
1 1/2 tablespoons paprika
1/2 teaspoon ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
½ tsp nutmeg
1 pinch cayenne pepper
Preheat an oven to 425 degrees F
Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil and honey, then, add seasonings. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more. If the potatoes burn easily, try adding the honey after the potatoes are baked.
