1 package tofu, drained and cut into cubes
1 small garlic clove or ½ tsp garlic powder
1tablespoon lemon juice
1 tablespoon white vinegar or rice vinegar
1 teaspoon dry mustard powder or prepared Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
½ tsp paprika
1/4 cup olive oil
Variation: add ½ tsp dill seed, ¼ tsp. honey or sugar
Blend everything but the oil for a few seconds.
Slowly pour in the remaining oil. Blend until smooth. Turn off the blender, transfer the mayonnaise to a container. Keep refrigerated.
